Chocolate Chip Coconut Almond Cookies – Vegan

I love love love chocolate chip cookies.  They have to be one of my very favorite desserts.  I seriously could give Cookie Monster a run for his money with my love of cookies.

No, I didn’t eat the whole plate, but I could have;)

I have been having fun creating new cookie recipes and it seems that many of my recipes revolve around the chocolate chip.  I have a really hard time not adding them to a cookie recipe, must be because chocolate, especially in the chip form is so darn delicious.

I created these Chocolate Chip Coconut Almond Cookies about a week ago and took them to work for my recipe guinea pigs co-workers.  By the time I hit the kitchen for another glass of water around 11am – they were long gone.  Now I call that a successful recipe!

Chocolate Chip Coconut Almond Cookies – Vegan

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 25 minutes

Yield: 12

Serving Size: 1 cookie

Calories per serving: 145

Ingredients

    Dry Ingredients:
  • 1/2 cup White Whole Wheat Flour
  • 1/2 cup Quick Oats
  • 1/4 cup + 1/8 cup Almonds, Chopped
  • 1/4 cup Shredded Coconut, Unsweetened
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cinnamon
  • Wet Ingredients
  • 1/4 cup Brown Sugar, Unpacked
  • 1/6 cup White Sugar
  • 1/4 cup Applesauce, Unsweetened
  • 1/4 cup Coconut Butter (I use Olivio Coconut Spread)
  • 1 tsp Pure Vanilla Extract
  • The Chocolate:
  • 1/2 cup Mini Chocolate Chips

Instructions

  1. Add all ingredients from dry list to a bowl, stir and set aside.
  2. Add all ingredients from wet list to a bowl and cream together on low until well mixed.
  3. Mix dry ingredients into wet ingredients on low until well mixed.
  4. Fold in chocolate chips by hand.
  5. Drop by rounded tablespoons onto a parchment paper lined cookie sheet.
  6. Bake 10-12 minutes in a pre-heated 375 degree oven.
  7. Remove from oven and let cool on pan for 2 minutes, then remove to a cooling rack.

Now you can substitute regular chocolate chips in place of the mini chips if you want to, but I highly recommend sticking with the mini chips – they make the cookies so much gooier than the big chips.
